As a prep cook for Coronado Brewing Company my responsibilities included, being at the kitchen 3 hours before the restaurant opened. Cleaning out both brick ovens with a shop vac. Turning on all air vents and ovens. removing all lids from the pizza station, pantry station and taco station, replacing all sanitation buckets to the designated stations, replacing all can liners. Restocking the salad station with fresh romaine & mixed greens. After setting up the kitchen i would go over all the stations and walk in cooler and freezer and start a list of such items that are going to be needed over the next couple days depending on the items needed. I would make all items from scratch according to CBC recipe book. Washed, peeled, and cut fruits and vegetables in advance to save time on food preparation. Maintained clean, hygienic kitchen workspace by sweeping, mopping, and taking out trash. Set up and prepared cooking supplies and workstations during opening and closing to maximize productivity.
