As an online food inspector I preform post mortem inspection of poultry carcasses looking for and recognizing pathological defectssuch asascites, tumors, airsacculitis, synovitis, leukosis, septicemia, toxemia, bruisings, and inflammation process. Directing the removal of any condition of the carcass that would affect the wholesomeness and saftey of the consumer's health. I have shadowed the offline CSIs to gain experience and knowedlge of what a CSI does and why. While floor shadowing the CSI i have observed a zero tolerence HACCP failure (regulation 381.65(f) and the writing of the noncompliance. I have also observed the writing of NRs for an SSOP such as rail dust, rail grease on the carcasses on the USDA inspection line, beaded condensation dripping onto product at further processing(cook) plant regulation 416.2(d) and 416.4(d)(2).I have been insturmental in alerting my offline CSIs and Supervisior of noncompliances resulting in SPS and SSOP NRs being issued such as; production floor drains overflowing onto production floor, production employees holding two birds in one hand , not washing their hands correctly before handling carcasses after touching something that was on the floor, I have found forigen matieral on carcasses such as gear pieces from production line mechines. I have observed and notified my offline CSI about rehang belt flowing and birds faling on to the floor. I communicate with plant management concerning problems that may affect the wholesomeness of the product. I also have assisted my USDA co-workers with their time and attendance papers and helped to guide new empolyees with less experinence than myself.
