To win the Corp Rolex's, you needed to maintain several goals in your store. The biggest two of those goals are the following..
Passing a unannounced Corp inspection with a 90% or higher. These inspections had several areas they covered including, Food Safety, Product Quality, Store and Team Member Appearance, and Service Control, to name the big ones.
You also had to be actively building sales in your store. Generally a 20% increase in sales vs last year was the goal to hit.
