I work as a G-7 meat inspector at a hog slaughter factory and work with pathology. I inspect the hog heads, viscera(insides) and carcass. I check for any fecal or any that looks out of the ordinary. I work closely the establishment and keeping everything under control and running smoothly. We work closely with H.A.C.C.P, S.P.S. and S.S.O.P. We make sure to keep the customers safe in taking pride in food safety and food defense. We follow the establishment in following the safety and hygiene regulations. I do shadowing with off line inspectors and learn the task the they do on a daily basis. On May 4th 2021, I did a walk with my off line where we checked the bone canon in the cold side where we checked for bones, skin and/or foreign objects and also walked around and did the daily tasks he was assigned for that day.
