The kill floor is where i started my career at calihan's. In my short time on the kill floor before i moved to the boning room i learned how to do the following:

  • cut head meat,
  • use the hydraulic scissors for decapitation and hanging heads
  • run the brisket saw,
  • remove thyroids,
  • help clean up during and at the end of the day.
  • Operated production machinery in accordance with safety protocols.
  • Adhered strictly to health and safety regulations at all times while performing job duties.

Boning Room General Production Worker

My job as a boning room general production worker was to safely and efficiently cut or clean meat off of any and all parts of the product while removing the bones, cartilage, and anything non edible. I have learned and become very efficient at every position in the boning room and personally specialized in assisting the supervisors to fill any jobs or responsibilities that needed to be done at any given time including:

  • cutting down the shoulder
  • bringing the carcass in and throwing shoulders
  • shoulder de-boner
  • Shoulder bone puller machine
  • cleaning the neck bone

  • clean skirt meat
  • operate all of the wizzer knives and de-fatter

  • operate the wizzer knives for the ham bones and neck bones
  • Work on the table checking the product for anything inedible before throwing meat on the conveyer and dumping the correct weight into the bins.

  • operate the X-ray machine to check for anything metal or inedible that made it into the product.

My job as the On the Line Trainer in the boning room and processing room has been my most valuable experience. My position is mainly tasked with training new employees on how to complete and perform safely and efficiently in whichever jobs and tasks they have been assigned to. during my time as the trainer i have also gained the skills to assist the supervisors with any and all tasks and positions that need to be completed or filled at any given time, including but not limited to filling in and assisting them to supervise when they are not available or present.
