In Fall 2019, assisted in opening the first True Food Kitchen location in Downtown Summerlin, Las Vegas, Nevada. True Food Kitchen offers a menu that emphasizes on "healthy can be delicious" cuisine with seasonal changes. During this opening, assisted fellow FOH and BOH food service professionals in developing and streamlining food order management, payment processing and overall menu proficiency.

Job overview

  • Assisted in opening of Las Vegas's first True Food Kitchen in the heart of Downtown Summerlin. True Food Kitchen is the brainchild of celebrated author Dr. Andrew Weil and restaurateur Sam Fox. The concept has flourished and there over 40 locations across the United States.
  • As part of an opening team, took part in intensive two week training learning all food descriptions and front of the house serving concepts. Opened with original team October 23rd 2019 and have been working full-time since Covid 19 began March 2020. Responsibilities include working with TFK (True Food Kitchen) staff to maximize customer service and provide fluidity in response to high volume shift demands
  • Enhanced operational efficiency by using slow periods to restock employee and customer supplies, including ice, condiments, utensils, napkins, trays and delivery bags.

  • Participated and helped to lead initial opening of Levy food service division at Las Vegas Ballpark in Downtown Summerlin April 2019.
