Summary

I bring a wealth of over a quarter century's experience not only to my trade in food service but also my managing style. I've worked with all walks of life from inner city kids to multi-cultural settings to the upper echelon of American society from camps to schools to corporate accounts to medical and 5-star cuisine. I bring a unique blend of positive reinforcement and discipline to my role and the people that work for me. I've become a confidant to my superiors as well as those who are in separate departments from mine within an organization. I bring people together and want to set them up for success as well as challenge myself. The bar is consistently raised when goals are achieved, and I consider my door always open to ideas and matters that concern an ever-changing world and the demands that come with high expectations. I am constantly improving my knowledge in my field, and I'm routinely called upon by former employers to troubleshoot and assist when available. I have written articles and supplied recipes to various food service publications - specializing in organic foods and have many established ties within the natural products community. Worked with many CIA graduates and was trained closely by them in my early years in the industry. In my 20+ years in charge of budgets I have never gone over.   • Managed the day-to-day business operations of an innovative instant veggie burger concept. First of its kind.
  • Developed and maintained strong relationships with clients, resulting in repeat business and referrals - contracting over 30 accounts coast to coast.
  • Oversaw daily operations, ensuring all tasks and orders were fulfilled accurately and efficiently by team members.
  • Increased customer satisfaction by implementing efficient business processes and providing exceptional customer service.
  • Successfully pivoted sales to e-commerce i.e. Walmart online, Amazon, etc.

  • Oversaw all aspects of an institutional food service operation in a year-round retreat setting.
  • Including but not limited to: special diets for children with chronic diseases and illnesses - kidney disease renal diets, gluten free, Crohn's, liver disease, diabetes, vegan, vegetarian, kosher, dairy free, peanut/tree nut free, and many more.
  • Managed staff of 25+ serving family-style 3 meals a day of about 250 plates per meal.
  • Responsible for ordering, payroll, health & safety, staffing, training, menu planning, corporate development fundraising, cross-department coordinating.
  • Created a 150 page food service manual.
  • Led webinars with sister camps within the organization and streamlined food shows, workshops and expos for company staff as well as developed recipe exchanges for volunteers and donors.
  • I was also employed by this company starting as a Volunteer in 2003, hired as an Executive Chef in 2004 up until June of 2006

  • Performed in a dual role in which I was responsible for the physical plant of a 100 acre/30+ building camp for inner city children.
  • I also oversaw all of the food service requirements. Accomplished many firsts in the camps' 80 year history, including overseeing the construction of ropes course, tee-pee village, renovation of a staff lounge/nurses station as well as weed abatement and major upgrades after years of neglect.
  • For food service; successfully established a healthy living program for the children in which we sought organic and all-natural food companies to donate products for our food service program.
  • Led overhaul of security and computer upgrades throughout the facility and worked closely with the board and directors in accomplishing many other fundraising goals.
  • In addition, I was employed by this company from June 1999 to October 2000 as the Food Service Manager.
