  • As a Team Leader in the distillery I would make sure every part of the process in the distillery was running right and smooth, from the Grain area, the Cookers, and the Stills.
  • I was responsible for making Operational decisions when the supervisor wasn't at work and had to problem solve in real time issues that would come up during the operations.
  • I would fill in to the Grain operator, Cooker Operator, and Still Operators roles and run that area of the distillery whenever those Operators were out.
  • I would also operate a forklift and move materials and enzymes whenever needed.
  • Over the years at BBC I have also worked in the Warehouse Department when they needed help.
  • I would enter the barrels into the ricks, take out the barrels, load and unload barrel trailers, worked in the cistern room, and counted barrels for inventory.

Still Operator

  • As a Still Operator in the distillery I would pump mash from a fermenter tank into a beer well and from there I would pump the mash through two 45 foot tall Stills.
  • I would operate a screen for the Stills where I would send steam through the stills at the same time as the mash and the alcohol from the mash would evaporate and then be condensed down into a clear liquid form of alcohol called white dog.
  • Would have to follow specific work instructions for each different recipe to make sure I evaporated the alcohol at a certain temperature to make sure the proof of the alcohol would be around a specific number, usually 130 or 135 proof alcohol.

Bottling Operator

  • As a bottling operator I worked on every line in the bottling department (3 different lines) and worked on every job of the line.
  • I would dump glass, run a filler machine, foiler machine, labeler machine, case sealer machine, and hand palletize cases.
  • I would also operate a forklift when needed.
  • I would changeover machines on each machine for different size bottles multiple times a week.

Cooker Operator

  • Worked as a Cooker Operator in the distillery at Bardstown Bourbon.
  • I would follow a work instructions recipe and cook mash in 13,000 gallon mash tubs.
  • After cooking the mash I would then pump the mash through a mash cooler into a fermenter tank where the mash would sit for 3 days and then the mash combined with yeast would break the sugars from the mash down into alcohol.

  • I make sure bottles go into a case and get taped up as it goes through the case sealer.
  • I change over the line when the line switches from one bottle size to another.
  • I have ran line 7 packer for almost three years now.
  • While running line 7 packer I have been a part of 7 production records that were broken for three different size bottles (1.75L, 1L, and 750ml).
