Director of Prepared-Foodservice, Bakery & Floral

04.2002 - 03.2020
  • Responsible for $5 million a week in sales company wide including foodservice, bakery & floral.
  • Developed the following programs within the foodservice department-Imported cheese program, Carry-Out-Catering, off-premise catering, Salad Bars, Ready Meals. During my tenure with United, I was also responsible for developing the Peet's Coffee Shops, which we eventually turned into Starbucks (32 throughout the company)
  • I was the direct report for both the Bakery & Floral Directors and was responsible for their team development, increasing sales and enhancing bottom lines.

Harrigan's & Don Pablo's Restaurants

DF&R, Inc.
04.1977 - 09.2000
  • Started working with DF&R Restaurants while in Texas Tech. I stayed with the company after graduation helping them grow the Harrigan's and Don Pablo's restaurants to a 150 unit chain.
  • The company went public in 1993 and then sold to Apple South in 1995. At that time I became President of the Harrigan's Division. Harrigan's was sold again in 1998 and then in 1999 I made the decision to leave the restaurant business.

  • The last project that I worked on prior to leaving United and then doing consulting work after, was developing the Foodservice operation (Concessions, Catering and Rave On, their upscale restaurant) inside the Buddy Holly Hall of Performing Arts and Sciences in Lubbock, Tx
  • I am currently doing consulting work for Robert Taylor (retired CEO of United Supermarkets) and his partners to open a Food Hall in downtown Lubbock
  • I have co-authored 2 cookbooks (Always Enough Thyme and It's About Thyme) with four great girlfriends We have been cooking together for 40 years

Additional Information

My husband, Mike, and I have been a member of Alto Lakes Country Club since 2004. Since retiring, I have begun to spend the summers in Alto which certainly beats the sweltering heat of West Texas summers. We have always enjoyed the club and what it has to offer, but do feel like anything, can continue to be improved.


I am interested in becoming a member of the House Committee because I feel that I have much to offer the club. I have sat on the House Committee and Audit Committee of Lubbock Country Club, where we continue to be members, so I feel I certainly have a grasp of what a House Committee's responsibilities are.


I come from a business background and would not just sit on the committee to spend money. I completely understand that the decisions of the Club must all remain fiscally responsible, but always made to enhance the club for the betterment of the members.
