  • Pro outfitters is an upscale, multi-day fishing outfitting service. My task was to produce a high-end dining experience outdoors in very remote locations. This role is by far the most unique and comprehensive of anything I have done to date, utilizing customer service as well as culinary skills along with numerous others. I was the lead chef with 2 helpers to whom I would delegate tasks. We typically had a crew of 15 people on these 5-day trips. I was responsible for planning every meal during that time as well as packing the coolers and dry boxes before we set out.
  • My Day-to-Day: I would start out each morning rowing my own raft packed with gear down to our next campsite. From there I would set up a 16x20 foot wall tent and a makeshift, mobile camp kitchen inside where I would prepare all the food. That evening as the clients arrived at camp I would set out appetizers and get them any drinks or cocktails they wanted. From there I would cook dinner, plate it, and serve it to everyone. As I took care of the clients over those 5 days, the crew and I would also form friendships and bonds with many of them, which surely made it an even more enjoyable experience.

  • During my time at Ale Works, I became much more proficient as a server and gained a lot of new skills related to complex time management and multitasking. As it is an 8000 square foot restaurant, I really got a feel for high volume, fast paced work.

  • Responsible for the set-up, break-down, and service in the dining room as well as coordination of service staff. Our events were often large scale, sometimes even reaching 300 or 400 people. I expedited food in high volume conditions, as well as working in all aspects of catering functions including serving food, bartending, wine service, etc.
