I have been in the industry for thirty years. Twelve plus bartending,two in management. As a server, I was typically in the role of a closer or head wait. My current job as a server, allows some manage capabilities,as well as access to the bar. We mostly self manage, which works well for me. My favorite aspect of this job has been building relationships with the guests, creating regulars and building the business. I've enjoyed this aspect very much. To be part of something intimate and personal.
