I enjoy cooking honest food. Honest meaning how ingredients are grown and harvested and applied while keeping their integrity in place. Hunting, fishing and foraging things like wild mushrooms, ramps and herbs are some of my favorite pastimes, all the while anticipating how they will all come together. Lets keep food simple and delicious and true to its origins.

Great working relationships with various vendors-including fish mongers and local farms(resourcing local produce and meats). Kept a working herbs and vegetable garden.

Making and cooking of fresh hand rolled pastas and bread. Housemade stocks and sauces.

Daily specials, family style catering, holiday prix fixe menus. Familiar with excel.
