I love to cook! My love of food came from my family operating a 4 star resort Rancho Encantado in Santa Fe. Growing up on property gave me day-to-day knowledge of working in all facets of a hotel. From dishwasher to front desk, from horse chorale to cantina, I've done it all! With that said, I spent most of my time working in the kitchen or front of house as a waiter. I loved watching the sous chef and line cooks work together at a fast pace and at the same time making beautiful plates and delicious food.
I'm in the kitchen cooking a lot! So much so, I have a 32 inch tv with a Sonos sound bar in there. My favorite methods of cooking is with a sous vide and a charcoal grill. I cook protein in the sous vide for a couple hours and finish it on the grill. There is nothing better to me than a ribeye steak with a Pittsburg style sear! Sunday evening dinner is usually a big event for me and my family. I make something really special. Yes, ribeye is a family favorite but I also like to have a project. Sunday night is always desert night! An all day in the kitchen kinda project. For example, I'll make homemade ravioli with my scratch marinara. I also love shopping for food! I’m very picky about the food I buy and I do a lot of research. Not one store satisfies me and my familes needs. Whole foods or better for protein and produce. Pavilions for something in the aisles. I recently discovered Costco’s Kirkland brand. I’m very happy with the quality of Kirkland’s oils, butter, tomato sauce and chicken stock to name only a few. I’m also very picky about restaurants. Right down to where we sit.
