
Began in the food service industry at 16 years old washing dishes at Catfish Charlies in San Antonio. Moving on from there worked in many restaurants in San Antonio and Austin.
In San Antonio worked at Twin Sisters making sandwiches and the oven and stove station. Also for Restaurant Biga under Bruce Auden working the wood grill and oven.
In Austin worked at several places in the San Gabriel Restaurant Group over the years reaching the position of sous chef for Mezzaluna downtown.
With 30+ years of experience in the food service industry i have worked in every position from busboy to owner/operator.
Over saw complete design and buildout of space.
Acquired all city and state licenses including TABC.
Created menu and recipes.
Developed relationships with all vendors and service companies.
Did all other shopping at Restaurant Depot for items that were more cost effective .
Trained and managed employees
Payed all bills including payroll
