  • Have managed now four different cafe's in the Shorebird neighborhood... Pear cafe, KitchenSync, Root cafe, and now 1001 Marketplace. Able to step in and manage any kitchen space with up to 30 employees.
  • Leanpath champion for the neighborhood... We utilize a system that collects data from waste that is created in our cafes. Whether it be overproduction, trim, expired or spoiled product. We create goals based on the data to waste less as a company and I help to expedite the goals and ensure that the neighborhood is reaching these goals.
  • I am responsible for creating production logs for our cooks. The production logs tell our cooks what dishes they need to focus on, how much they should be prepping and making, and then they tell us how much was leftover. We use this data for next menu rotation and we also dictate what to do with leftovers i.e.; pop-ups, donations, cross utilization.
