I help mycelium to grow in buckets and logs. When growing in buckets i place my medium in plastic knit bags and pasteurize straw or straw pellets at approximately 170 degrees F for 2 hours, then drain the excess water out by hanging the bags for another couple hours. Once the medium is no longer soaking, only damp, it can be mixed with a substrate previously colonized by the mycelium you want to grow. Weigh your damp medium, 5% of that weight will be how much colonized substrate you need to mix in. Next, tightly pack the mixture into your 5 gallon buckets with holes for fresh air exchange, put the lid on, and put it in a shady place outdoors. Check every few days to ensure the mycelium is getting plenty of fresh air and your substrate isn't too moist or not moist enough. After about 30-45 days you mushrooms should start growing, then 3-7 days later they should be ready for harvest.
