Veritas is a family owned, chef driven restaurant focused on seasonal dishes and their vast wine selection. Veritas often featured paired wine dinners and buy out dinners for guests.
5th and Taylor is a chef focused, farm to table upscale casual American restaurant. Since it is high volume, effective teamwork was important here. Food knowledge was emphasized as menu changes occurred daily with rotating specials.
Fin & Pearl was an upscale 'sea to fork' restaurant that focused on seafood knowledge and included an oyster bar. I worked here through a restaurant purchase and management change, hence the name change to Pemrose; Pemrose was a similar concept that emphasized steps of service.
Stoney River is a fine dining steakhouse where steps of service and proper wine service were important. While bartending here, classic cocktail and spirit knowledge was emphasized as well as detailed food knowledge.
