  • Implemented modern techniques such as fat-washing, acid adjusting, spherification, fruit jacking, ultrasonic infusion, and lacto-fermentation to create new cocktail ingredients, reduce overhead costs, and outlast product shortages
  • Hosting an average of 120-150 covers nightly to the tune of 8,000 in sales for the restaurant, I worked the service well producing craft cocktails for restaurant guests while serving seated guests at the 18 person bartop
  • Depending on local events and the hotel's contracted obligations the average sales and covers would double, particularly during Cali Vibes, ComplexCon, Long Beach Grand Prix, the Arthur Murray Dance Competition, and ILWU13 contract negotiations bringing in an excess of 250 covers and 14,000 in sales
  • Represented Highgate Hotels, Marriott, and the Navy Proof team at Tales of the Cocktail 2023 at keynote seminars and craft cocktail masterclasses
  • Sponsored by Marriott and Bruichladdie for Camp Runamok 2023, touring several distilleries with their support, including Jim Beam, Maker's Mark, Wild Turkey, Heaven Hill, Bardstown, and Old Forester.
