  • I was the senior catering manager for their three locations. John Anthonys in Babylon, The Harbor Club in Huntington and Cocos in Huntington.
  • At John Anthonys I reinvented the floorplan to access additional sales models and increase party space. I redesigned the catering menu and adjusted pricing. I increase sales by 60%.
  • The Harbor Club was in the early stages of changing from a restaurant to a catering hall. I worked with the designers to enhance the layout. Determined all furniture, flatware, dishes, menus, pricing and hiring practices. I was the sole person responsible for all sales for the venue. Sales started from day one from a trailer onsite showing colored renderings of the future hall to customers.
  • Cocos was in the process of a ground up construction. I worked with their team on menus, pricing, advertising and hiring. After construction I hired and trained a sales team for their site with all bookings being approved by me.
