  • Dark Sweet Cherry: Studied anti-cancer properties of anthocyanins within dark sweet cherry juice through performing anthocyanin extractions, Western blot protein quantification, PCR gel electrophoresis, chemical reagent preparation, and lab cleanup
  • Anti-Inflammatory Mango-Derived Gallotannins: Performed basic cell culture techniques with various colonic cell lines and isolated RNA from various fibroblast cell lines using standard protocol to understand the anti-inflammatory effects of mango gallotannins on the gut
  • Cranberry Cold & Flu: Performed short-chain fatty acid extraction with collected human fecal samples to understand how cranberry juice affects immune profiles of those susceptible to frequent cold and flu cases; presented project poster at the 2024 TAMU Student Research Week: Huynh, C., Maglalang, L., Shanmugam, H.S., Mahmood, T.N., Castellon Chicas, M.J., Schmidt-Combest, S., Munoz-Medina, R., Farmer, D.E., Cannon, C.L., Mertens-Talcott, S.U.
