I’ve learned over my 20 plus yrs. working in the service industry; that when you take a splash of imagination, sprinkle of Curiosity, pinch of uncertainty, an unbelievable mix of organizational, quick, and multitasking skills, blend those; with the basic formula of confidence, decisiveness and in some cases, a smidge of narcissistic tendencies together, creates; balance or a taste of magic. Over the years I've witnessed a balanced kitchen a few times, they had created something that was interesting enough, intriguing enough, desired enough to make you want it, crave it, need to share it. That's when I realized I wanted to switch to the BOH, to be one of the creator's. I always found the science intriguing behind baking, my next move was to focus on learning to become a Pastry Chef - Professional Baker.
