I have worked with Five Daughters Bakery in Franklin, TN since May of 2021.
All of my experience has been on overnight shift, hours ranging anywhere from 7pm-8am.
I began as a decorator and then quickly became a team lead, supervisor, and manager.
Responsibilities include the following:
- Managing kitchen production teams of up to 20 people, handling product for 10 locations across Tennessee and Georgia.
- Managing schedules and labor hours for all employees across two shifts.
- Educating employees on kitchen safety, quality standards, time management, communication.
- Training and cross-training employees on multiple skill sets within the kitchen, with a strong emphasis on safety, quality, and consistency.
- Conducting regular performance reviews for employees. When necessary, initiating disciplinary conversations.
- Developing professional relationships with team members, and maintaining an open and trusting community within and between teams.
- Troubleshooting and improvising to ensure that tasks are done efficiently and in a timely manner while maintaining the health, safety, and wellness of team members.
- Preparing high quality pastries for daily production.
- Supporting and encouraging employees by providing feedback, acknowledging achievements, and promptly addressing any problems or inconsistencies that arose.
Technical experience includes:
- Opening and closing the studio before and after classes.
- Cleaning and sanitizing shared spaces and equipment, including the studio itself, lobby, bathrooms/showers, parking lot, laundry, etc.
- Sales of classes, memberships, retail.
