Work History

Head Pastry Chef

Ron Ben-Israel Cakes
05.2022 - Current

The refinement of fine sugar art is what makes Ron Ben-Israel Cakes unlike any other cake maker in the craft. Ron’s style was developed early on and now replicated by many in the field. My ability to adapt under pressure led me successfully to manage the kitchen. I oversaw all aspects of production, ensuring consistency of procedures, quality of products, and adherence to establishment standards using meticulous tools to construct perfection. The drive to exceed standards fueled team morale to produce simply exquisite masterpieces. I participated amongst the other department managers to launch the frameworks of each cake weekly. My position relied heavily on the structural features of the massive designs requiring woodworking and architecture. Ordering and cost control management became of high importance and consideration to me during the week sustaining amicable relations with vendors. The level of detail was a must for the prestigious clients and vendors expecting only but the best. Ron Ben-Israel Cakes pushed me to a level of extreme precision that I carry with me in everything I do.

Self Employed

Madeline's Pastries
04.2021 - 05.2022

My personal passion for design led me to start my own business, Madeline’s Pastries. From the ground up, I developed my own personal array of items including custom cakes, cupcakes, cookies, and cake pops. Through word of mouth and social media, I began receiving several orders on a weekly basis, not only were they visually pleasing, but professionally crafted with quality ingredients. My personal relations have led to standing clients who trust and order my desserts for every event they have. I have completed large orders from bridal showers and baby showers to birthdays and holidays. I have also had the privilege to partner with businesses in Hoboken such as Electric Picks, Alivio Wellness, and The Little Play Co. to make custom products. Consulting with clients to help them construct their visions and include their personal ascetic for their occasion is crucial to me. I sketch and plan the designs, making each party something custom and one of a kind.

Pastry Sous Chef

Breads Bakery
11.2018 - 04.2021

Breads Bakery was the turning point in my early career, I worked my way up from a pastry cook to a management role. I became a shift leader and mentor to my colleagues as well as had complex responsibilities including configuring & organizing the week’s production planner within an excel spreadsheet and maintaining weekly inventory logs to ensure ingredients were ordered accordingly. I was trusted to order produce and communicate directly with other department heads. With three locations, I was in charge of producing and supplying pastries to every location. I worked closely with Pastry Chef, Edan Leshnick, to plan events, holidays, and new product advancements. During my time at Breads Bakery, the pastry and cakes department merged, which brought on added responsibility and challenges. I managed both departments’ productions to ensure the day-to-day operations ran smoothly. Breads Bakery has made a significant impact on my growth in the industry as it was the largest volume production I have done thus far as well as it being my first leadership position.
