Summary

My history in the food and beverage industry, over 30 years in Charleston, is rich in experience, drawn from a variety of my mentors that runs deep from many local peers of note. Instead of a laundry list of my past work posts I have attached a brief synopsis. I hope this is acceptable but considering I have not really applied for a position in nearly 30 years I apologize in advance if this irregular.

I truly love the service industry and am driven to create the best experiences for my guests with each and every opportunity they afford me by their patronage. I've always said opportunity is all we’re given…our success is dutifully earned.

  • Conceptualized, designed, named and oversaw all aspects of its creation, FF&E and build-out of Bambu.
  • Created and finalized both sushi and dinner menus including overseeing test kitchen final offerings from our respective chefs as well as all menu design graphics.
  • Set up all POS systems, inventory control systems, FOH and BOH routines and responsibilities.
  • Acted as general manager for day-to-day restaurant functions including scheduling, foodservice and maintaining exemplary customer service for which I am known.

  • While an on-premise liquor consultant with Ben Arnold I was hired to conceptualize, design, create and run a nightclub downtown at 5 Faber St. following their purchase of The Indigo Lounge.
  • My duties included final decisions on every aspect of the business.
  • I implemented and followed a strict inventory control system as well as a hyper-punctual staffing routine.
  • Designed and created all advertisements including visual graphics, radio commercials and a multiple award winning television commercial.
  • Analyzed and presented financial standings and cost effectiveness to other partners and investors.
  • Established and implemented business procedures and process improvements.
  • Developed and administered $500,000+ yearly budget.
  • Saw increases in revenue yearly from our first year to our closing.
  • Operated a venue at a regularly reached capacity of 600 patrons with 3,000+ through the door weekly for 10 years with only one violation (fake ID) and zero complaints of any type from neighboring businesses or residents....which is unheard of for this type of business.
