As the executive chef for the Peterson brothers, I oversee all 3 of the restaurant they operate. Doing all the ordering, scheduling, running 6 crews, hiring, firing, inventory, new menu and dish design.
I was a metal stud framer, drywaller, glazer, commercial door fitter and built out the metal and vinyl frames for the glass offices.
Working For Wolfe, I had a variety of jobs I had to complete on my own most of the time. Anything from full bathroom and kitchen demo, lite framing, drywall, taping, mud and texture, trim, shower and tub install, kitchen appliance installs, cabinet and counter setting, LVP, painting (interior and exterior) and lots of tile work.
Alma was a niche 7 days a week brunch spot. I was in charge of putting out 4 seasonal menus per year. Ran a very small crew for a ton of volume. Food costing, ordering, inventory and coordinated several large events each week whlie simultaneously running the regular business durning hours.
