After being laid off a food trailer fell into my lap so I decided to try it, I organized and remodeled the trailer, got all the county/state permits, went online and found locations to set up, stocked the trailer with needed provisions and off I went. This is very hard work, long hours, grueling temperatures and you never know what you're going to make each day. I have operated the trailer by myself for 6 months and have realized its not for me, I need structure and stability in my work life.
First 3 months I was the lead in a cafeteria based inside of a manufacturing company. My duties were to fill in as cashier and cook when needed, I ordered product 3 times a week, counted cash tills daily and made deposits to the bank. I also worked nights when needed resulting in split shifts to ensure both shifts were prepared for service. When that company closed their cafeteria I started traveling to help other cafeterias. I was laid off after the holidays due to not wanting to travel 5 days a week out of state and low seniority.
