  • Hired to reinvent a rowdy, bachelorette party den on the east side of town into a hip, southern inspired gastro pub.
  • Single handedly ran 2 two thousand gallon barbeque pits with brisket, pork butts, wings, turkey, sausage and specials while writing, pricing, and sourcing new menu items for new concept.
  • Trained old and new staffs techniques such as sous vide, fish cookery, sauté, and prep for new menu. Transitioned from QR code style ordering to servers, training FOH for salesmanship and hospitality with attention to allergens and detailed preparation methods.

  • Adopted a staff of men and women employed with the same company for up to nearly 40 years. Brought everyone together during the stressful time of COVID by renovating both kitchens.
  • Mastered menu development and pricing through Foodtrak system. Developed new curb side and holiday “take and bake” menus.
  • Ran weekly specials, priced through Foodtrak and taught FOH and BOH execution and salesmanship. Ran a series of exotic “Burgers of the Week,” growing our return customers though incentive.
