Control of Salmonella enterica and Enterohemorrhagic Escherichia coli on Sprouts and Leafy Green Vegetables

  • Inactivated outbreak strains, including E. coli O157:H7, E. coli O104:H4, and Salmonella enterica, on alfalfa seeds and sprouts using calcium hypochlorite and peroxyacetic acid.
  • Cultivated and harvested spinach to control E. coli O157:H7 by applying nematode pheromones and ascaroside #18 (seed treatment, foliar spray treatment) and examined the microbial quality of spinach at different harvest and storage weeks.

Microbiological Quality of Fresh-Cut Vegetables and Fruits.

  • Analyzed various microorganisms in fresh-cut produce, including mesophilic microorganisms, psychrophilic microorganisms, generic E. coli, total coliforms, yeast and mold, Bacillus cereus, Staphylococcus aureus, Salmonella spp., and E. coli O157:H7.

Project: Intense Pulsed Light (IPL) Treatment for Inactivation of Food-Borne Pathogens in Agricultural and Fishery Fresh-Cut Products.

  • Utilized Intense Pulsed Light (IPL) to inactivate E. coli O157:H7 surrogate inoculated on fresh-cut bell peppers under different treatment conditions.

Project: Intense Pulsed Light (IPL) Treatment for Inactivation of Bacillus cereus and Spores in Fresh-Cut Products.

  • Conducted preliminary experiments and collected data.
