My duties and experience in this job consist of:

- Properly Wash, connect, wrap and package small intestine.

-Ability to Wash, cut, and package the large intestine.

-Able to wash the esophagus and package it neatly.

-Able to wash the cows head and make sure it is cleaned in a thoroughly manner, eliminating all visible dirty waste.

-Properly clean and prepare stomach (menudo) with knife.

- Able to put in washer and clean the Beef book tripe (librillo) and Aorta, as well as packaging it.

-Ability to Clean kidneys with scissors and package.

-Sweet bread meat (molleja).

-Clean the rectal and anal area aswell as package it. (Cuajo).

-Clean and prepare for packaging the penis.

-Clean, wash, prepare and package cheek, lips, and head. (cachete, labio, cabeza).

-Ability to clean neck with knife and package it.

-ability to utilize (wizard) machine to properly cut meat in head area and tails (colas).

-Able to hang heads, tongues and liver in racks aswell as package them.

-Ability to clean tongue with knife.

-Knowlege of hanging and preparing heart for packaging.

-Ability and knowledge of using the machine (pulpo) to seal packages.

-Ability to bag and package cow's feet.

-Knowledge of all product names.

-Knowledge and ability of using the weight scale and computer to add product to inventory.

-Knowledge of using and making boxes.
