  • Oversee food service and laundry services for 14 correctional facilities, and was solely self-sufficient
  • Worked with purchasing and development to secure new accounts for RFPs, and CPI's for existing accounts
  • Work with our legal team when preparing new accounts, and CPI's for existing accounts
  • Work with procurement and our food service companies to ensure that food shortages are as few as possible
  • Partnered closely with facility administrators to ensure performance meets or exceeds their standards and expectations
  • Set yearly budgets, KPI's and communicate those to my Teams
  • Directly responsible for hiring all food and service Directors and assisting with hiring staff as needed
  • Conduct weekly conference calls with my directors to go over financial results from the previous week
  • Visit all sites at least once a month to ensure operational standards, processes and expectations are followed and met
  • Assisting Directors with issues that arise by coaching them to be able to handle them as they arise
  • Assist Directors with staffing needs as needed
  • Coach and teach daily went in units to help develop all Directors, especially newly hired ones
  • Ensuring the important items are not getting overlooked by the urgent items that happen daily
  • Ensure that I am available and approachable to all my direct reports
  • Conduct monthly one on one with my directors to work with them on their development
  • Work with Directors on how to read to properly control inventory, labor, and other costs to have a consistent P&L

  • Regional Manager over 15 School Districts which had 75 Schools in the respective Districts and around 400 team members and managers that I supervised
  • Work closely with Superintendents, school staff and board members to ensure that the needs of each District are met for the nutritional needs of the children
  • Ensuring that all school Directors are compliant with all local, State and Federal nutritional guidelines and regulations
  • Responsible for Maximizing performance and financial expectations for Opaa and School Districts
  • Conduct monthly regional meetings to pull teams together to communicate company and Districts expectations
  • Budgeting each school district's yearly budgets, with plans in place to achieve those financial goals
  • Hiring, Training, and developing any new Directors and Kitchen managers that come on board
  • Part of this is 2 yearly regional meetings to keep all managers up to date with programs with Opal and the state along with keeping them up to date with the required training hours needed to be compliant with the State
  • Ensuring that all cost controls are being used and expectations with food and labor costs are being met through weekly inventories

  • I was hired in 2012 to help seek out location sights, help with design, and construction of the new corporate locations that they were launching
  • Was responsible for all aspects of the operations for all the locations, and all new restaurant builds, and directly reported to the Vice President of the company
  • It was my responsibility for all marketing for each location to ensure that sales goals were being met and reaching out to the public for exposure
  • Some of my other functions that I took on was to implement and or revamp the existing processes that were in place for the company
  • Implemented new training program and materials for both team staff and Managers
  • Completely overhauled the inventory system, Safety and Sanitation programs along with developing a new updated employee handbook

  • Coordinated and directed a 6.5-million-dollar restaurant with over 130 employees and 6 Managers harboring full responsibilities for all aspects of the business
  • Increased sales from 40,000 per week to over 125,000 per week
  • This was the first location to achieve a 1-million- and 2- million-dollar bottom line profit for a year
  • Grew my location to a training unit where I provided training for well over 60 managers, including the promotion of 6 of my managers to General Manager and 12 hourly employees to other management positions
  • Frequently traveled across the area to open new locations as well as assist other stores that were struggling, by providing quality training, coaching to the management and hourly teams
  • Continually stayed in the top 10 performers year after year while I was with Olive Garden
