I started working at Lake Arrowhead as line cook for a few months. I would work the fryers, make salads, pastas and pizzas. I would help the dishwashers when they needed help and I worked the closing shift, shutting down the kitchen and ensuring it was clean and ready for the next day. Then all the dishwashers walked out on the same day and my head chef approached me asking me to become the head dishwasher for a dollar raise. I obliged him and became the head dishwasher. I cleaned the dishes and silverware, put away the dishes in the correct areas, and closed the dish pit every night. I maintained a clean working area and dish machine. I would sweep and mop the dish area. I was also tasked with dealing with the kitchen garbage and the bar's garbage and glass bags.
Sliced and weighed deli meats to the customer's requests. Made customers custom sub sandwiches. Prepared cold items for sale like potato salads, coleslaws, devilled eggs, frozen pizzas, etc. I would make these items to a certain weight and usually in large quantities, helping customers with orders between and during prepping. I would also maintain a clean atmosphere, sweeping and mopping the floors, wiping off the scales and other surface areas, washing dishes, and cleaning the meat slicers between orders. There was also an ice cream stand adjacent to the deli I would attend to. I would scoop ice cream and handle the cash register at the end of the customer interaction.
Made food orders in accordance to the customer's requests. Started closing the kitchen at night, cleaning the surface areas, sweeping and mopping the floors, washed the dishes and cleaned the sinks. Then trained to open the store, preparing food products such as slicing tomatoes, making soups, thawing frozen chicken, portioning items like corned beef and coleslaw. Preparing the workspace for the day by setting out all the necessary utensils. I would also unload the twice weekly truck delivery in the cooler and freezer. Occasionally I was trained to work up front hand deliver orders to tables and cars, sometimes work the drive through window.
