
My name is Stephen Thomas , I am from Newkirk/ Ponca City Oklahoma I am 36 years old . I grew up with my Mother and Grandparents , they taught me hard work ethic all my life growing up. 9 years ago I had been introduced into the Beef Industry and have committed to a career of it as well as dedicated my life around it . Safely Managing , coaching and teaching people and helping fellow employees around me grow and succeed , I like to lead by creating new leaders around me in anything i do .
Completed on Boarding Program which included the following .
- Final Trim insuring that there is no contamination inside and out of carcass before going to the hotboxes , this is last line of difference before carcass's go Fabrication .
- Air Knifes , Flank , Low Back , Low Neck . proper skinning of the hides is an important process , must be done properly to secure the value of the hides for sell and for contamination purposes as the next process continues in slaughter 2 . Hair , Hide , Stomach Fluids ETC are considered contamination . Also improper skinning into the red meat takes yield and real dollar value off the product.
- Shackling and Running the Knocking Gun . These two jobs go hand in hand because of the communication that has to happen between the team members to insure safety of the shackler's and most importantly the proper and humane way of handling of cattle while knocking . This job is extremely critical due to the proper placement of the Gun and maintaning the belts and incline chain , at the same time keeping the area safe for other team members .

This Job required alot of practice and training . this four hundred pound saw runs on air adjustment . proper blade placement and tension on the blade , water out flow is extremely important . while cutting through the carcass you must split perfectly down the middle of the spine in order to properly remove all of the spinal cord from the carcass . This job must be performed perfectly due to cattle yields, any carcass split incorrectly takes out real dollar vaulue out of the product .
On the Gutting table I am required to drop the stomach without disrupting the bile , I then must spread out the stomach for USDA inspection . next I pull out the liver with the bile secured to it . the final step is to pull out the Aorta with heart and the lungs attached properly and the heart sack opened for USDA inspection and hanging tender must be properly opened for Final Trim and Fabrication without any damage . this job is among one of the most important critical jobs seeing as how any contamination to the inside or outside will verdict the product no good .
