I analyzed all of our financial and sales reports to make decisions on the all purchases and projects in the hotel.
I set up large distribution deals for the hotel from various distributors and producers for all products and services in the hotel as well as some larger projects.
I am also responsible for assuring we have a well balanced P&L statement.
I currently maintain a Food cost of about 15-17%.
I also spend a lot of time researching the market for new and innovative products to bring into the hotel to help drive sales.
Being a huge convention hotel (biggest in the state at 1500 rooms and 50 event spaces) a lot of my time is spent assuring that we have all the necessary product in the building for all our outlets as well as all of the events going on daily.

I was part of the small team that opened the hotel. Since the brand is still new, I was given total freedom to develop the entire purchasing/receiving program from top to bottom.
The first two months were spent managing the purchasing and receiving of FF&E as well as monitoring our pre-opening budget.
I spent a great deal of time sourcing products that fit both our brand’s ethos and budget.
Being an environmentally friendly and sustainable luxury hotel has its difficulties in regards to keeping costs low. Nevertheless, I was able to control our spending and we surpassed our initial projections for our first year.
In regards to food & beverage, I oversaw the sourcing and purchasing for banquets, in room dining, our café, restaurant, cocktail lounge, rooftop pool bar, and cafeteria.
I set up purchasing and promotional programs with producers and distributors that helped us achieve better bulk pricing.
On the receiving end, I set up systems to ensure that all the product coming into the hotel is separated efficiently between all of our different outlets and safely secured in their proper storage areas. These systems also include requisition procedures to assure product is going to the correct person in a timely manner.
I used AccuBar to track our beverage inventory and costs and BirchStreet as our main purchasing and procurement tool. With the invoicing process I set up I was able to efficiently separate all of our costs into several categories in order to monitor specific costs.

Knowledge of market conditions, product innovations, and social trends allowed me to compete in a very competitive market in Manhattan.
After a year in street sales I moved into our Contracts and Bids department, working with our largest and most sensitive accounts including Cruise Ships, Universities, and various School Districts.
Organizational and intuitive listening skills allowed me to effectively communicate the wants and needs of my customers to our Buyers, Accountants, and Operations personnel to provide a reliable and efficient service to our customer.
I’ve restructured the Coordinator position by adjusting our workflow to improve efficiency and accuracy across the board.
My responsibilities include developing bids and contracts which are presented to customers to help us acquire more of their business. Once business is gained I generate orders as well as facilitate deliveries by ensuring product availability and that our delivery drivers and trucks have all the necessary clearance to service our customers.
The other main function of my job is making sure all of our contracted pricing is in place and that the customer's balance sheet is always clear. This requires a great deal of organization and attention to detail.
