The menu was planned, the ingredients for food were ordered, each morning at 5AM breakfast would be prepared and assembled in an attractive buffet. When the food platters were empty they were placed in a large dishwasher for cleaning for the next day meal. And, importantly, take care of special customer dietary needs.
