  • I started at the cold mezze station, moved up the line to the hot mezze, and eventually to the grill station. Within the first 6 months, I have gained knowledge and practice on the whole line.
  • At Suraya, the big grill cook is calling out and timing the picks, with communication with the chef or sous chef on the expo pass.
  • Since the middle of August 2025, I am preparing the staff meal once a week, feeding about 50 crew members on a Wednesday.

  • Old Brook Inn Tavern is a rural tavern located outside of Scranton, PA.
  • During service, I grilled NY strips, filet mignon, lamb chops, and burgers to the customers' preferred temperature. as well as grilled chicken breast, shrimp, and a stuffed pork chop.
  • As part of my daily prep task, I was in charge of the mashed potatoes, butchering lamb and pork racks, and preparing the pork chop stuffing.

  • Sibio's is an Italian American restaurant in Scranton, PA. I worked there for 6 months.
  • My daily prep tasks include cleaning shrimp, shucking clams, chopping and filling clam casino, dicing mirepoix for soups and mixing salad dressings (Russian, balsamic, Caesar, ranch).
  • During service, I was in charge of the salads and appetizer station, as well as giving support to the grill cook.

  • Tully's Good Times is a large sports bar located at the junction of I-81, I-476, I-380, and I-84. Serving hundreds of covers every day for lunch and dinner.
  • I stared at the pasta station (baked ziti, fettuccini Alfredo, mac and cheese, etc.). Next, I worked on the smaller flat grill, flipping burgers by temperature. After that, I worked the bigger flat grill, cooking the fish, chicken quesadillas, and sandwiches. Within 3 or 4 months, I was handling the hot side, sometimes more than one station at a time.
  • My next step was the fryers, where we cooked hundreds of chicken tenders every day, along with the usual bar food staples.
  • After one year on the line, I was promoted to be an Assistant Kitchen Manager. My tasks include assigning stations and prep tasks, assigning closing tasks, calling and timing appetizers and entrées on the line or from the expo station, and closing check-up and inventory.

  • This was a small restaurant located in a nursery. The crew was only me, the chef, and a part-time dishwasher on the weekend.
  • At this restaurant, I make spanakopita, clean branzino, prep for sups of the week, and set up the salads and sandwiches station.
  • During service, I run the cold station, support the chef on the hot line, and run the dishes with the help of a busser.
  • I really enjoy making the cheese and fruit boards that got paired with the wine. It was a popular order.
