• Throughout the changes of management in food service. I have performed the following job duties to manage the day-to-day operation. Including procurement, financial reporting, inventory control, employee scheduling and payroll. Participate in requested departmental meetings and training. Conduct all food supply purchasing on a weekly basis in order to meet budget constraints. Develop and managed budget while actively seeking ways to eliminate or reduce expenses, audit diets for compliance. Hire, discipline, and train employees as needed. I have experience with My Florida Market place with submitting requisitions that officially notifies purchasing offices of a need for a commodity and/or service. Identify equipment in food service by the property tags. Use CDC to look up inmates information.

• During my employment as a Vocational instructor II, I was responsible for monitoring the NCNP program to ensure compliance with federal and state requirements. Provided technical assistance, training, & guidance to staff and inmates. Ensured staff were observing, and counting all eligible offender receiving a reimbursable meal and recording the count. Properly determine if the meal served qualified for reimbursement. Monitored to ensure sure staff wouldn’t count a meal until after the participants had received all meal components in correct portions sizes, including milk. Monitored and reviewed documentation and ensure compliance per policy and procedures. Conducted follow- up monitoring as needed Reviewed all required documentation and training: Authorization memo, Daily Enrolment forms, individual determination forms, daily meal counts, monthly summary of daily meal counts, quarterly Department of Health inspection with CAP, Civil rights training, & complaint of Discrimination, offer vs Serve waiver from DOE, Production logs, Substitutions, USDA substitutions, Fire safety inspection, Inventory, Fire Marshal Annual reports, pest control records, temperature logs where USDA commodities was stored at the warehouse. Conduct audits and any re-audits. Notified the Bureau of Institutional Support Services in writing regarding: any non-compliance practices, abnormalities involving NCNP procedures. Completed written reports within required time frames. Identify problems, potential solutions, and corrective action plans. Compared the food cost worksheet with the US Food Report to ensure they match the monthly reports.
