I did this while I was also my father's full-time caregiver and I continue to teach ESL even now (although my father passed in March 2017). Contracted to teach Introductory Spanish classes.

  • This was a full-time position where I taught nutrition, gardening and physical activity to low-income residents of Gregg County, TX (SNAP-Ed eligible) in English and in Spanish. These classes were taught to children, adults and senior citizens in English and in Spanish to improve their health and to give them a better access to healthy food. Obtained national Nutritional Educator's Certification and food-handler's card. These classes were free for those that were SNAP-Ed eligible. TX A&M is a state-school that is non-profit. I started this position right after my father passed away (after being his full-time caregiver for 16 years). This position (along with 81 other similar positions) was eliminated on September 30, 2025.
  • Developed educational programs to enhance community agricultural practices.
