  • Ensure that regulated establishments produce a safe product by executing appropriate inspection methods, determining noncompliance within regulatory requirements, and initiating enforcement action, where warranted throughout the slaughter and processing of poultry/swine products.
  • Compliance of proper humane handling regulations is ensured and examination of livestock is conducted by independently overseeing ante-mortem activities and communicating to barn personnel as appropriate. Verify pen identification card information is accurate. If disabled/injured/diseased animals are present, isolation is maintained and coordinated with plant personnel and on site Public Health Veterinarian (PHV) for final disposition to be completed. Performing post-mortem inspections through visual observation and physical palpitation of heads, viscera, and carcasses. Evaluate parts and carcasses for contamination and abnormalities/disease (abscesses, masses, peritonitis, etc). When found, proper identification and appropriate notification is given to establishment employees as well as USDA personnel. Regular communication and engagement with Public Health Veterinarian (PHV) regarding abnormal findings are performed and discussions are held to review the numerous pathologies as well as diseases including internal parasites, abscessation, icterus, peritonitis, lymphoma, etc. Allow establishment employees to resolve issues that have been identified in a prompt manner. Keeps supervisors informed in a timely manner and in accordance with protocols. Make regulatory decisions in a non-discriminatory and impartial manner. Determines when a regulatory control action is necessary, such as stopping the production lines and railing unwholesome carcasses out for reconditioning. Discussion and studying of the relevant hazard analysis and critical control points at my current establishment is performed with Consumer Safety Inspector (CSIs), Supervisory Consumer Safety Inspector (SCSI), as well as PHV to determine any non-compliance with regulatory requirements as well as enhance my knowledge regarding overall food safety. Observing and assisting CSIs performing routine and directed tasks such as SSOP Review and Observation, SPS Verification, and Slaughter HAACP tasks are also implemented. During this process records are reviewed, plant operations observed and hands-on verifications are performed to ensure compliance with regulatory requirements is maintained.
