  • Working as a food inspector for USDA since 2012, my main goal has been to assure that the establishment provides safe, unaltered, properly labeled, and wholesome product
  • Duties: While performing my inspection duties my main goal is to prevent adulterated product from entering commerce, I accomplish this by performing postmortem inspection of the head, viscera and carcasses involving palpation, incision lymph nodes with extremely sharp knifes and by observing different types of pathology as well as contamination of product
  • While performing my duties on multiple occasions I have retained carcasses with abnormalities for PHV disposition with on multiple occasions resulting in carcass being condemned as well as sending samples to be tested for pathology
  • I assure that the establishment is following all applicable code of federal regulations as well their implementation of their SSOP, HACCP, SPS and GMP programs
  • On days that we are fully staffed of when we are down in slaughter, I utilize this time to shadowed CSIs in ante-mortem and exportation of product being shipped to foreign countries by assuring the product is in full compliance with all applicable foreign country regulations governing the exportation of meat products
  • This includes checking export library requirements by country to ensure exported product meet or exceed the countries requirement standards for export and all applicable documents are verified
  • I would also review establishments labeling of product to verify that all required information is accurate and not misleading
  • All labels need to list all required information such as product name, ingredient statement, establishment number, name of establishment net weights safe handling procedures, and nutrition facts
  • Accomplishments: I have learned to identify different types of pathology such as melanoma, Distomo, pneumonia, peritonitis, and cysticercosis with some resulting in carcasses being condemned for pathology
  • I have retained possible TB (tuberculosis) for SPHV disposition and samples being sent out
  • While employed with FSIS I have gained communication skills and computer skills, I also like to take on new challenges and volunteer to help on opposite shift when needed
  • I have been able to utilize my expertise and pass down my knowledge when being assigned new inspection personnel to be trained.
