Due to my extensive experience working all shifts from overnight to closing, and through countless changes in many aspects of the department, my daily duties have varied and my overall understanding is extremely thorough.

• Daily and weekly production of all specialty fresh cut cheeses including Parmigiano-Reggiano, cheese boards, cubes, 4 pack cubes, crumbles, shreds, and other products.
• Daily set up of the department, out of date/shrink process, following (and correcting) FIFO in the whole department, cheese and dry/accompaniment backstock and organization, production planner, warehouse and DSD vendor orders, cleaning and throwing trash before shift end.
• Stocking duties including supplies and wrap, deliveries
• Receiving orders, checking in cheese, and organizing cooler storage
• Assisting customers and partners with various needs, training new and existing partners

• Previously all closing duties including evening backstock and facing, pulling parm, cleaning of food prep surfaces, sink, drain, floor mats, floor scrubbing, and closing out with MIC.
