- I would have a specific amount of chicken to batter and fry depending on how busy we were
- Making sure the coolers were at the proper temperature was very important, I was required to record the temp on a log sheet upon clocking in to work and before I clocked out
- I always kept my work area clean by sweeping up flour that may have gotten on the floor in the battering station
- I would have to make sure there was enough chicken under heat lamps but also being mindful to remove any chicken that was under the lamps too long and may have gotten dried out
- I would change the grease in the deep fryers and record it on the log sheet as well
- After every shift, I would throw away all chicken and side items then take out the garbage, clean and disinfect food prep areas, coolers, fryers, stainless steel fixtures and equipment, then sweep and mop the food prep areas and front lobby.
