After completing comprehensive 12 week training program I was placed in their worst performing location with the goal of improving operations, sales and profitability. Began with learning the strengths and areas of opportunity of staff, re-training where needed and replacing staff that were not cooperative with our plans! Specifically, worked with my asst managers and the first 90 days were strictly focused on operations, cleanliness and delivering a great experience to our guests. Within those 90 days we lowered our food cost to best in company, labor cost at budget and sales trending up. I then set up a local store marketing plan in order to reach out to the community, talking to local schools and churches with fundraising ideas and also to our local business to increase awareness of our bulk sales and delivery options! After this, I took these same principles and programs to the other locations working a few months with the GM's of each of our 7 locations. At the end of this I was tasked with opening our next location in McKinney TX and then opened our Denton location. After Denton was off and running I was promoted to Director of operations and was directly responsible for 4 of our 9 locations. After a couple of years in this role I was tasked with implementing our Catering operation which at the time was only a small delivery operation at each location. We began with about 100k in sales with one truck and very little equipment. This was a phenomenal success and after 5 years of building this division we ended up with over 1 million in sales each of the last 2 years and had grown to 2 food trucks and a third support truck with a full service staff and full service caterings of any size and menu. Unfortunately Covid 19 hit our country and the owner decided to close down the company. At this time I took about 6 months off work and then rejoined the company which was opening a new chain, Dave's Hot Chicken as General manager/Training Manager at their flagship restaurant. After 3 yrs at Dave's Hot Chicken and finishing up developing our training systems with my replacement I decided to step down and take some time off!
