Eighteen years of extensive experience working in red meat kill plants as a red meat inspector for the United States Department of Agriculture (USDA). Cross-trained in goats, lambs, hogs, and bison. My exposure to high pathology plants allowed me to use expert judgment when efficiently tagging carcasses for PHV disposition. Expert knowledge during the determination of pathological conditions that can result in products being unfit for human consumption and entering commerce. Knowledgeable in hazard analysis critical control points (HACCP). Aware of (CCP's) good manufacturing practices (GMPs), sanitation standard operating procedures (SSPs), and sanitation performance standard (SPS) programs regarding both slaughter and production perspectives. Dependable, experienced, and the primary trainer in the following slaughter plants Caviness, Tyson, Cargill (Friona, TX) in regard to newly employed inspectors. Implementing safety and health practices to the new employment staff. Trained in exports, EMT-60 cloth video training, MT-64, residue sample, cheek meat, head meat, and hearts.
