- my duties as a food inspector consists of a ful post mortem examination on all live stock carcasses and parts to insure they are fit for human consumption . There are 3 parts of the PM inspection ,Head,Carcass and the viscera . It is important that i properly inspecect all the lymph nodes as they are the specific regions of the body that drain the types of infections such as tumors and many other pathologies. I do so by observing,touching and smelling .
- While doing my inspections i have retained several carcasses for my PHV for deposition. During my head inspection i have retained several heads for possible tuberculosis , lymphoma and several other abnormalities and abscesses and cancers in the eye . while inspecting the tongue i observe the inter and outer surfaces as well as palpating to insure there are no abscesses or other contaminations .
- As i inspect the viscera i properly examine the esophagus and the spleen as well the reticular junction , the pluck and the liver, and kidneys for any tumors ,abscesses, hemorrhage parasites or other sigh's of abnormal conditions or pathologies. Inspecting the lymph nodes i insure they don't exhibit any sighs such as enlargement , firmness ,redness any abscess or any abnormal colors or structures while also palpating to feel for any abnormalities i may not be able to observe .
- During my inspections on the rail i am observing the outer and inner surfaces , the lymph nodes ,and the oxtail . I insure there are no SRM'S ,abscesses tumors bruising any abnormal hemorrhage or any contamination as well as thickened tissue , redness or injection lesions that may need to be retained for PHV deposition.
- I also on a daily insure the facility is following the proper Gmp, SSOP'S and HACCP plans the facility has in place, as well as constant communicating with management of any issues that may arise and need immediate action while informing my Scsi and PHV of any issues.
- While working in a high pathology facility i have had the opportunity to grow my knowledge on a daily while constantly asking questions .
