Expo
- Manage pizza expo during service
- Cut and dress pies post-bake
- Ensure pie quality is up-to-standard
- Ensure pies match tickets, arrive to tables/to-go counter in a timely fashion
- Communication - FOH for kitchen updates (in English), BOH for ticket refires (in Spanish)
- Assist line in service
- Cover for any station - dress, dough, bake
Dress
- Manage pie shots and tickets - Organize tickets to create bake order for pies
- Ensure tables and to-gos move timely
- Dress Pies - 250-500 pies/shift
- Ensure station is stocked before/during service
- Throw pies in oven - 13 ft peel, 2-3 pies/shot
Stretch/pat
- Stretch dough - 2 sizes (12”, 18”)
- Lean dough, high hydration
- Table-pat (no tossing)
- Ensure station is stocked before/during service
Bake
- Ensure pies are baked to-standard - oven maintenance and cleaning during shift
- 800 degree historic coal oven
- 7-13 pies/time, 7-12 min bakes
- 12ft maple peel
