Soup and sauce; I use a simplified process inspired from Jacob Burton, based on the five mother sauces. 1) Reductions - Increasing particulate matter. 2) Emulsion - combining fat, liquid and a stabilizer to create a mixture. 3) Puree - blending to create a compound.
