I moved from Ireland to Chicago in July 2017, I grew up in a rural farming community and had worked from a young age on our family farm which taught me an excellent work ethic and balancing multiple urgent tasks simultaneously and prioritizing work effectively, while also learning the importance of punctuality.

Watching my parents struggle to support 5 children on a farmers income definitely created a strong sense of financial responsibility and waste management, while working in different restaurants I have previously noticed a lot of waste and I am always very conscientious of produce wastage or for example sauces all being scraped out of containers.

When I arrived to America I first started working at Mollie’s Irish Pub in downtown Riverside and although I enjoyed my time there I decided to take a waitress position at Tony’s breakfast Cafe in Brookfield and stayed there up to March of 2020 when the Covid lockdown started, I was then 6 months pregnant with our first daughter and after she was born and Covid restrictions where lifted I stayed home with her until taking on a part time position at Mary’s morning mixup which I held for 3 years, during this time we welcomed our second daughter and I continued to work part time at Mary’s Morning Mixup until returning to full time employment at Tony’s Breakfast Cafe in March 2024 and I am currently still employed there. As much as I enjoy working for Tony’s it is a 24hr restaurant and now with my eldest daughter just starting first grade I want to move to an establishment with early closing times so I can manage a better work/home life balance.
