  • At Big Sals I was the Manager at the new store at the City Creek Mall downtown at the time of opening. I was directly responsible for opening the store, gauging what was needed for the day, prep what was needed, and set up and stock the line for lunch. I did the stores inventory and ordering from Sysco and U.S. Foods as well as researching better prices and quality on current products being purchased. I was in charge of food cost, portioning, food waste, hiring and training of new employees to our procedures and standards. I did the cost reports and was also in charge of making sure our registers weren’t coming up short and other problems weren’t happening. I was responsible for putting together a earnings report for the mall management monthly. I also designed 4 salad dressing recipes for the national chain that went on the menu and stayed in constant contact with the franchise owner and the corporate offices in Texas. Unfortunately the owner and the mall fell into a financial disagreement and gave us limited information about the troubles he was having up until the day the mall and our store parted ways.

  • I was a full-time cook and I would either get the food ready for the day or i would close the kitchen depending on the day. here I was responsible for making about 10 different deli salads from scratch, slow cooked, properly cool and sliced the deli meats (corned beef, pastrami, turkey, ham and etc), prepared customer orders and made many soups from scratch, boiled down bones to make stocks, made desserts, pastries, sauces and so on all from scratch daily. I worked alone most shifts so I am very good with time management, multi tasking and being efficient. I can use flat grills, ovens, stoves, BBQ's, Smokers and anything else. i have safe knife handling skills and I am not a stranger to prep work or cleaning. I also worked over 80 hours a pay period here consistently.
