While attending the San Diego Culinary Institute, I had the privilege of studying under the guidance of Chef Bo Friberg, Author of "The Professional Pastry Chef". We referred to his book for all of our teachings as the book outlines the fundamentals of Baking and Pastry. The class continued to use his next publishing "The Professional Pastry Chef" for sections V and VI taught by French Chef, Yves Fournier. What an amazing experience!
