• Boning Floor I did the cryovac on Tenderloins and Shoulders
• On the Kill Floor I inspected the caucus's of cow making sure all hair skin and other things were not on cow before wash. If after the wash the USDA found left on cow that was spouse to be removed. The USDA could and have condemned all our kill from that day.
